I use the Redirect plugin Godley, wrote a couple of posts about permalinks too.
And yes, you can change the title of the article, the text of the title element, but if you change the permanent link, it is better to have something that provides a 301 redirect from the old to the new.
Here’s a challenge for you (and readers), how much time you need a 301 to keep the search engines before releasing the old link for the new?
And another: suppose you finally drop your 301 … traffic will miss you? A server is just about being a main of many clients in a network. Once the main got problem, then all of the clients will be stopped and unworkable.

Haha, I’ve often looked at links like that and been irritated by the use of words at the end of the link, particularly when I was buying ‘adult products’ as a joke for a friend’s birthday. Now that you’ve explained how it relates to search engines though, I can see the need and will make sure my site links have the keywords inserted.

With regards to Google updating sites, I have been working on my site for the last few months improving the keywords and tags etc. and it usually takes 1-2 weeks for Google to pick up on a change. However this is also determined by how often you add content to your site, if nothing has been changed for 3 months, Google has no reason to come back and see what’s on the shelf.

Since you’re in absorb mode, just do what you’re doing now … learn as much as possible.

Then get your blog over the wordpress.org and choose a theme. Give it time since it won’t happen over night but if you continue to learn every day, you’ll move right on past all the bloggers who are currently standing still.
